Four-bean, rocket and chorizo salad


Ingredients 

  • 3 chorizo sausages, sliced
  •  80g baby rocket leaves
  •  1 red capsicum, seeded and chopped
  •  400g can fourbean mix, rinsed and drained
  •  2 tablespoons olive oil
  •  1 tablespoon red wine vinegar



Method 

Step 1
Heat a large non-stick frying pan over medium-high heat. Cook chorizo for 3 minutes, turning regularly, until dark golden and slightly crisp. Remove, drain on paper towel and keep warm.
Step 2
Place olive oil, vinegar, salt and pepper in a non-metallic bowl, and whisk to combine.
Step 3
Place chorizo in a serving dish. Add four-bean mix, capsicum and rocket. Drizzle with dressing and serve with crusty bread.
