Chargrilled capsicum and chorizo tartlets


With the spiciness of chorizo sausage enriching the mix, these canapes are irresistible.


Ingredients 


  •  2 sheets shortcrust pastry, thawed
  •  2 eggs, lightly beaten
  •  1/3 cup thickened cream
  •  1 (150g) chorizo sausage, finely chopped
  •  120g chargrilled red capsicum, shredded
  •  1/2 small red onion, finely chopped


Method 

Step 1
Preheat oven to 200°C. Lightly grease 16 x 1 1/2-tablespoon capacity patty pan holes. Using a 7cm fluted round cutter, cut out 16 rounds from pastry sheets. Press pastry rounds into patty pan holes.
Step 2
Combine eggs, cream, sausage, capsicum and onion in a bowl. Season with salt and pepper. Spoon mixture into pastry shells. Bake for 10 to 12 minutes or until pastry is golden and filling is set. Serve.
