Bacon, Tomato, Garlic, Six Cheese Crostini

A tasty appetizer that gets things started with flavors that go well with any event!


  • 1 loaf of Italians bread (sliced about 1/2 inch thick)
  • 1 lb thick cut Pancetta (if not available, regular thick cut bacon can be used)
  • 1 4oz of each cheese shredded:
  • Mozzarella
  • Parmesan
  • Romano
  • Provolone
  • Asiago
  • Reggiano
  • 6 Roma tomatoes (sliced about 1/4 inch thick)
  • 1/4 cup Basil minced
  • 1/4 cup E V Olive Oil
  • 1 clove of garlic (minced)
  • 1 small red onion (minced)
  • 1/4 cup balsamic vinegar
  • 1 teaspoon salt
  • 2 teaspoon ground black pepper
  • 2 teaspoon red flake peppers 


Brush all the slices of Italian bread with EV Olive Oil and place on a baking sheet. Pre-heat the oven to 350 degrees and place bread in to toast for two minutes.
 In a mixing bowl place all the shredded cheese,reserving some for garnish. Place the basil, garlic, onion, balsamic vinegar, salt, ground black pepper, red flake pepper. Mix well while adding EV Olive Oil, reserving 2 teaspoons of oil for pan searing Pancetta/bacon.
After toasting bread, place 2 tablespoons of cheese mixture on each placing a tomato slice on top of the cheese mixture, season with salt/pepper. Return to the oven for 4 minutes.
In a skillet sear Pancetta/bacon for 1 minute on each side in EV Olive oil. Drain off grease.
 Remove the crostini from oven, place Pancetta/bacon on each plate, sprinkle with reserved cheese and serve! Enjoy!
