Potato Salad Everyone Loves

Cold, full of flavor. This potato salad is one that everyone waits for me to make for functions or at home.


  • 10 - 15 large russet potatoes
  • Best Foods or Hellmans Mayonaise (you'll have to add what you think you want~I usually use a 30oz jar for 10-15 potatoes
  • Cook 1/2 pound bacon and drain. Crumble when cool
  • Salt and pepper to taste
  • 1 large can black pitted olives ~drained
  • 1 diced yellow onion (I've used green onions instead also and its just as good )
  • 6-8 hard boiled eggs cut into small pieces
  • paprika to decorate the top


Wash potatoes and put them in a large pot to boil~cook until tender
meanwhile you can boil the eggs and shell them when they're ready
Cook bacon till crisp ~ drain on paper towels and set aside
When potatoes are tender and you can pierce them through with a knife, drain and set aside to cool. When cool, take skins off and cut into large cubes into a large bowl.
Add the diced onions, drained olives, diced hard cooked eggs.
Add salt, pepper, crumbled bacon and enough mayonaise to wet it. Stir well but don't crush up the potatoes. If you need more mayonaise add more.
Additional Tips
Don't forget that the potato salad will dry out ~ I usually reserve a few hard cooked eggs for the top of the salad and put a tad of mayo over the eggs to keep them moist. Sprinkle with paprika for decoration. Cover and refrigerate.
