Chicken Soup with Meat Tortelloni

  • 2 pounds of Meat Tortelloni (I use frozen)
  • 4 tablespoons of butter
  • Grated cheese
  • 1 LARGE POT.....put the following below in this pot
  • 24 Cups of water
  • 1/2 chicken cut length wise
  • 5 large potatoes (peel and cut in quaters)
  • 1 onion (peeled and sliced in large slices)
  • 1 cup of peas
  • 5 celery stalks (wash and cut each one into three pieces)
  • 1 cup of cut up carrots (or baby carrots)
  • 1/2 cup of homemade red sauce (gives it a bit of color and taste)
  • 1 EGG... crack egg and keep only the SHELLS. (yes that is right... throw away the egg & put shells in the pot) .....remover it later.
  • Salt & Pepper to taste

Cook soup for about 3 hours... at first put gas on high until it boils... then lower it to medium.
In-between cooking... like every 15 mins or so... remove the fat that collects on top of pot and throw away.
After cooking... drain the chicken soup from the chicken, vegies,etc..Put the Chicken soup back in pot.
I remove the peas, onions, celery, chicken skin and the egg shells and throw them away.
I put the potatoes & Carrots in a bowl and puree them with a cup of the chicken soup..add this to the chicken soup (makes the soup thicker)
I take the chicken and pull it apart and shed it and put back in the pot where the broth is and
Put pot on the stove and let it boil
When it's boiling add the 2 pounds of Meat Tortelloni.... Cook until to your liking.
A few mins before removing the pot add the 4 tablespoons of butter
Serve in a bowl and add some grated cheese to the top
