Christmas Eve Pasta Alla Mamma

recipe image

I have lived in Rhode Island for the last 20 years. When I first moved here, my lovely Italian neighbor Mrs. Bazagalupi "adopted" me and this is one of the recipes she taught me for Feast of the 7 Fishes.

  • 3 pounds cleaned squid
  • 1 cup flour
  • 1 teaspoon salt
  • 1 pint oil for frying
  • 1 cup sliced banana peppers
  • 1 cup sliced black olives
  • 1 tablespoon finely minced fresh garlic
  • 1 cup olive oil
  • ¼ cup lemon juice
  • ¼ cup chopped parsley
  • 2 boxes (2 pounds) dried spinach linguine

Heat up the water for the pasta.
Heat up the oil for frying.
Cut the squid into rings.
Mix the flour and salt together in a plastic bag.
Start cooking the pasta.
Mix up the banana peppers, olives, garlic, olive oil, and lemon juice in a medium bowl.
Drop the squid in the flour to coat then immediately start frying.
Drain the pasta then return to the pasta pot, add the olive oil mixture and combine.
Pour into a serving bowl and top with the calamari and parsley. Serve immediately.
