Honey-roasted pear clafoutis

Honey-roasted pear clafoutis

This French dessert is a custard-like bake, traditionally made with fresh fruit.

Serves 4-6
Preparation time: 15 minutes
Cooking time: 1 hour

What you will need

  • 4 williams pears, peeled, cored, quartered
  • 2 tbs honey
  • 20g butter
  • 1/2 cup (75g) plain flour
  • 1/2 cup (100g) caster sugar
  • 2 eggs, lightly whisked
  • 2 egg yolks
  • 40g butter, melted
  • 2 cups (500ml) milk
  • 2 tbs Grand Marnier liqueur
  • 1 tsp vanilla extract

Step-by-step

1. Preheat oven

Preheat oven to 180°C. Place the pears in a 6-cup (1.5 litre) capacity ovenproof dish. Drizzle with honey and dot with butter. Bake in oven, turning occasionally, for 20 minutes or until pears are tender and starting to caramelise. Remove from oven and set aside for 15 minutes to cool.
2. Bake and serve

Meanwhile, combine the flour and sugar in a medium bowl. Add the eggs and egg yolks and stir to combine. Add the melted butter, milk, liqueur and vanilla and gently whisk to combine. Pour over the pears. Bake in oven for 30-40 minutes or until just set. Remove from oven and set aside for 5 minutes to cool slightly before serving.
